Because the angular (apparent) size of the earth would be so large, it would completely blot out the sun during an eclipse. The angular size of the moon is very close to that of the sun - that is why we can have annular eclipses of the sun viewed from the earth. The angular size of the earth viewed from the moon would be about four times bigger than that of the sun, so there could never be an eclipse where we could see the edge of the sun peaking out all around the edge of the earth.
